New Recipe Wednesday

I brought this dip to our Super Bowl get-together, and everyone loved it. It's a heart-stopper, but that's ok occasionally. It's party food, people! And a super easy recipe.


Reuben Dip

(I forgot to take a picture of the ingredients. I was in a Super Bowl frenzy.)

Ingredients:
  • 1/2 lb. diced corned beef (bought sliced at the deli counter)
  • 8 oz. package cream cheese, softened
  • 1 cup shredded Swiss cheese
  • 1 cup sauerkraut, drained well
  • 1/2 cup sour cream
  • 1 tbs. ketchup
  • 2 tsp. spicy brown mustard
  • rye crackers (my mom informed me there's a rye Triscuit)
Instructions:

Heat oven to 350 degrees. Grease a casserole dish. (I used an 8x8 glass Pyrex)

In a medium-sized bowl, mix all ingredients until well blended. Spoon into casserole dish.

Bake at 350 for 30 minutes until hot and bubbly. Serve warm with crackers.

  3. lady! i have to tell you..the happy hour i used to go to in LA had these appetizers that are pretty much what you described above. essentially, they took the filling, wrapped a spoonfull of it in a little wonton wrapper (in a ball shape) and fried the sucker and stuck in on a popsicle stick. they were called reuben popsicles. i think there was more of a meat/less cream cheese ratio but i love those little cream cheese filled wontons you get an chinese places (do you know what i'm talking about?) i think this dip would be sooo good in it. leave it to me to make things more fattening!
